Providing food choice is very important in the aged care sector, where quality of life is paramount. The actual food choices vary with individuals and include unconscious and conscious decisions made by an elderly person before or at the point of food consumption. This session will review a resident’s rights in choosing the foods they would like to eat and the facilities responsibility in making sure a resident’s nutritional needs are being met.

  9:30 a.m.     Cleaning, Sanitation and Gloving in Dietary Services

Proper food handling and effectively sanitizing work areas is crucial to the health and well-being of the residents who reside in nursing homes and assisted living facilities. This session will teach you how to ensure that your staff meets state and federal  requirements for preparing and serving food safely, so you comply with regulations and minimize risks related to food-borne illness outbreaks.

10:45 a.m.     Preparing Dietary Staff for Survey
                    
Speaker: Julie Halfpop           
Surveys can be stressful for everyone in the foodservice department. One way to help alleviate some of the pressure is to know what the regulations require, and then try to view those requirements through the eyes of the surveyors. This session will provide the keys to a successful dietary department survey by reviewing best practices for preparing your staff for survey.

12:30 p.m.     Dining Trends and New Food Items in Long Term Care
                    
Speakers: Julie Halfpop and Scott Fadden   
This fun session will share trends in menu planning and food service in healthcare communities based on the growing consumer preferences. Discussion will focus on the new concepts to meet the customer’s food preferences and the tools available to meet these demands. The Chef will also let you taste products suited to meet the tastes of the incoming baby-boomers.

 2:15 p.m.     Happy Hour Drinks and Hors d’ oeuvres for Seniors
                   
Speaker: Scott Fadden
From onsite pubs and Bloody Mary bars to home brewing beer, senior housing as of late has aimed to appeal to the happy hour lover in every resident. Learn the trends in alcoholic and non-alcoholic drinks, tasty and easy to prepare appetizers and hors d’ oeuvres, and what to provide in your facilities happy-hour social events.
